Meat its Makers: Lunch With Tiller Dining and Dirty Clean Food at Taste Great Southern

It’s been quite some time since I travelled south for a food event, and was excited to be invited to the “Meat its Makers” collaboration lunch in Albany between Tiller Dining and Dirty Clean Food as part of Taste Great Southern 2025.

The event delivered a celebration of regenerative agriculture, sustainability, and serious flavour. It was held at KM Farm Manypeaks in Kalgan, some 30 minutes from the centre of Albany. Farmer Ken Rochester’s ethically raised beef was in the safe hands of chef George Cooper in a five-course tasting menu designed to showcase low-mile, high-impact dining.

Dishes featured beef from the farm, including some creative snacks as I’ve come to expect from George.

  • beef tartare served with bread, spent milk and ash
  • Beef carpaccio, cream cheese, beetroot, watermelon radish, sea celery and samphire
  • Spelt tart, jerusalem articuhoke puree, beef tongue, braised rail, nasturtium leaf, runner beans.

Wines were provided by Forest Hill and Lowboi wines. Dessert saw George break out the liquid nitrogen, which was a new experience for many diners.

A guest appearance was made by more flies than I think anyone there had ever experienced – hopefully not too many made it into the photos! Flies aside, this was a wonderful lunch in a special location, and it was great to re-experience George’s cooking.
