Truffle season is upon us, and earlier this week I was treated to a preview of the forthcoming “Truffle Alchemy” dinner series from celebrated chefs Oliver ‘Oli’ Buenviaje of Olio’s Fine Food and Jed Gerrard. The series will be held at Below & Above’s new Truffle HQ in Subiaco and hosted by Michael Ribaudo of Olio’s.
Each course of this intimate dining experience joins high-grade truffles from Below & Above’s Pemberton estate with local and global ingredients, and is paired with exceptional wines.

The preview menu featured:
- Otoro Tuna – brick pastry, calamansi, truffle, Oscietra caviar
- Beef Tartare – brioche, bush tucker dressing, truffle
- Beetroot Piccalilli – goat’s curd, truffle
- Glacier 51 Toothfish – fermented Korean spice, truffled Koshihikari barley, tom kha emulsion
- Aged Wagin Duck – sauce Périgueux, truffled honey glaze, beetroot & rhubarb marmalade
- Pecan Praline Parfait – cocoa nib ice cream, Pedro Ximénez reduction, truffle and hazelnut brittle
It’s always a delight to see a menu designed to showcase truffles, not the arbitrary shaving onto existing dishes we seem to have become used to. The highlight was the toothfish, with the Korean-flavoured barley an unexpected pleasure.

The Truffle Alchemy dinner series will be held across four evenings on 24, 25, 26 and 27 June. Limited tickets remain and can be purchased from www.olios.com.au/truffle-alchemy
