Restaurant launch: The Don Fuzion at The Food Foundry, Victoria Park

Food FoundryA couple of weeks ago I was invited to the launch of The Don Fuzion at new pop-up restaurant “incubator” The Food Foundry in Victoria Park with a group of local food bloggers. The Don Fuzion is brought to you by the folks behind Don Burgers, Perth’s home of the ramen burger.

It was a most enjoyable evening, being generously fed until well past my normal bedtime. Given that the restaurant was exclusively occupied by bloggers, there were many photos taken, much furniture climbed in search of better lighting, and lots of curious looks from passers by.

Here’s some of the unique and delicious dishes we tried through the evening.

Food FoundryFish crackers. Slightly more fishy than your usual prawn-variety, but also much less greasy.

Food FoundryThe first entree was a Thai seafood cocktail with prawns, calamari, crab stick & vermicilli. I’m not really a shellfish eater so I passed on this one, but my leftovers were quickly devoured by other ravenous bloggers (who obviously don’t eat enough).

Food FoundrySecond entree was crab meat croquettes with mango salsa, snow pea sprouts and lemon paprika mayo. These were soft inside with a super crunchy coasting, and went really well with the fresh salsa and tangy mayo.

Food FoundryHere’s the dish that was the highlight for many o us – the matcha “baoger” with corn crunch chicken, lettuce and lemon paprika mayo.

This is Perth’s first matcha “baoger”, where the super-soft bao bun is infused with matcha powder. The chicken was to die for – crunchy, moist, flavoursome. Wow. What a stunning creation.

Food FoundryHere’s another photo of the “baoger” – skilfullyย hand modeled by Inexology – just because…

Food FoundryBy this point we were all getting full, but they weren’t done yet. Next was the Vietnamese fresh slaw with cabbage, carrot, mint, coriander, peanut, shallot and some massive soft shell crab.

Food FoundryThe star of the main courses was this totally unattractive butย who-cares-its-delicious pork knuckle with Taiwanese sausages.

This dish is designed to be shared between three normal people / two bloggers, the pork was quite delicious with some great crackle as you can see. The sausages were sweet, which was a new experience for me, but I quite liked them.

Food FoundryDessert number one was this beautiful yuzu panacotta trifle. There’s cream on top, and chunks of brownie hidden in the layer of biscuity crumb. That’s right – chunks of brownie.

Food FoundryDon Burgers is famous for its crepe layer cakes, and this was the first time I’d tried one – my arm didn’t have to be twisted as the flavour was caramel macchiato. How beautiful is that?

I can appreciate the texture – and the flavour was stunning – but my English heritage leads me to prefer my cake in more traditional “sponge” form. Don’t let that stop you, though.

Food FoundryThe Don Fuzion at The Food Foundry is now open for dinner (and sometimes lunch), and they have good reason to celebrate. Expect what you see above to change, develop, mutate and be replaced with new creations that will probably blow your mind. More info on their Facebook page…
