I couldn’t wait to share some pictures from the recent collaboration dinner between Sauma (chef Gurps Bagga) and Brendan Pang, which saw a coming together of Indian and Mauritian flavours in a street food-inspired feast. As you would expect, it was a meal to remember.
Thanks to Gurps, Brendan and all the Sauma staff for yet another great experience.

The menu was:
- Prawn Chilli Colada – Shark Bay prawns, pineapple, pickle, seeds, crisp chickpea khakra crisps
- Mauritian Beef Samosas – green chillies, coriander seeds, peas, sweet chilli mango chutney
- Fremantle Octopus – bharwa roast peppers, royal potatoes, mustard seeds, mint, roast finger millet
- Basil Chicken – tandoor roasted, basil, green chilli, ginger, garam masala, tomato kachumber
- Pork Vindaloo Slider – pulled pork, Indo Chinese Manchurian sauce, Sauma-slaw
- Coastal Fish in Banana Leaf – mustard seeds, roast cumin, tamarind, kashmiri chilli paste, coconut sambal
- Aged basmati pulao rice
- 24-hour sourdough naan with homemade cultured sesame and chilli butter
- Black Rice Payassam – coconut, jaggery caramel, puffed rice, almonds
There wasn’t a miss to be found, but my highlights were the samosas and pork vindaloo slider. A meal made of those two dishes would be dangerous indeed!
