Morsels & The Shelf Life

Photo Gallery: Dinner on the Deck at The Norfolk Hotel

Last week I attended an outstanding collaboration dinner between chefs Leigh Nash of Fremantle’s Norfolk Hotel and Brenton Pyke of Bunbury’s Market Eating House.

Ably assisted by the legendary Russell Blaikie, this “Dinner on the Deck” at the Norfolk was a celebration of Middle Eastern dishes and amazing local produce (notably the figs and the lamb).

The menu was…
(On arrival, Leigh Nash)
– Tea smoked salmon som tum on betel leaf

(Shared Entree, Brenton Pyke)
– Wood fired sourdough focaccia and za’atar manoush
– Hummus, spiced lamb, raisins, pine nuts
– Ferguson Valley figs, stracciatella, pumpkin seeds

(Shared main course, Brenton Pyke)
– Slow Roasted & smoked Amelia Park lamb shoulder, dates, Turkish coffee, pistachio
– Braised flat beans, tomato, preserved lemon, labna
– Shirazi salad, pomegranate, mint, dill
– Mejadra rice, lentils, currants, fried onion

(Dessert, Leigh Nash & Ruth Moloney)
– Pistachio & apricot souffra

Picking a highlight is difficult, I think it would have to be the entire entree course, mainly thanks to the figs! Thanks to Gary and Meredith from The Norfolk, the chefs, and all involved for a fantastic evening.
