Morsels & The Shelf Life

Photo Gallery: Big Don’s Smoked Meats x Dahl Daddys

I was recently privileged to spend a morning behind the scenes at Big Don’s Smoked Meats, on a day when local legends Dahl Daddys were guesting dishes on the menu. It’s no secret that Big Don’s delivers world-class barbecue, and Dahl Daddys has made waves around the country with its take on South Asian and Burmese cuisine, so this was a highly anticipated collaboration.

I’ve spent time in plenty of kitchens, and Don’s is one of the most impressive. It’s run with almost military precision, most notably demonstrated with a by-the-minute countdown as the crucial first platter was prepared. The huge team (I counted about 20) knew exactly what needed to be done, and when.

Dahl Daddys contributed a (phenomenal) dahl, smoked beef curry and spiced chicken to the menu. Leon’s Smashed Burgers from Melbourne was on the grill.

The wait at Big Don’s is well known, but I finally understand why so many persevere. It’s an event in itself; there’s a sense of community in the waiting area, and no feeling of frustration.

Don works his way around the crowd, making sure everyone is happy and feeding mac & cheese to hungry children made to queue against their will. A group that came from Melbourne, Sydney and Canberra just for the event couldn’t speak highly enough about the experience.

See a collection of my photos from the day below. Big Don’s and Dahl Daddys are two of our finest dining experiences, and if you’re yet to try them then don’t wait any longer.

Thanks to all at Big Don’s and Dahl Daddys for letting me get in the way at their busiest time.
