Morsels & The Shelf Life

Inside the (Cheese) Factory: La Delizia Latticini

I first met husband & wife team Dom and Kirsty Boccia from La Delizia Latticini in 2020, when I wrote about their new cheese factory in Hawaiian’s Park Centre for Broadsheet. At that time, burrata and stracciatella were relatively unknown to Perth diners as it was usually imported frozen from Italy.

Fast forward to 2025, and it’s unusual not to find their produce featured on a Perth bar or restaurant menu. Their products – including mozzarella, ricotta, burrata, stracciatella and scamorza – are found in dishes, sandwiches and pizzas across town.

I was recently invited to visit their main factory. I was amazed to see how far they’ve come in just five years. It’s a slick operation with a fast moving, efficient team (not to mention a fleet of six delivery vans).

They’re a true Perth success story, and their operation continues to expand so stay tuned for future news.

Just a few weeks ago, I was in the room to see Dom and Kirsty once again win WA’s Champion Bovine Cheese at the Perth Royal Dairy Awards.

One of the best parts of my visit was seeing how much the team enjoy working there. It feels like one big family, and it’s a delight to see a family-owned business become such an important part of the Perth culinary landscape.

The latest product in La Delizia’s range is Buffalo Mozzarella and Bocconcini produced from local buffalo milk, fresh from a herd they worked directly with a farmer to establish. It’s a premium product that offers an unparalleled velvety texture and delicate, milky taste that melts in the mouth.

La Delizia’s products are available in dishes across Perth, and for retail purchase from their Park Centre outlet and retailers including IGAs and gourmet delis.
