The $25 Million Baillie Hill Precinct Opens in East Victoria Park

Last week I was given a preview of the new Baillie Hill community hub and dining precinct, ahead of its official opening on 19 January 2026.

Located on the historic Elizabeth Baillie site in East Victoria Park, the $25 million redevelopment will offer multiple hospitality venues, creative studios, markets and the restored Elizabeth Baillie House, once Western Australiaโ€™s first specialist maternity hospital.

It’s an impressive achievement in design and construction, successfully achieving the intended feeling as a “walkable village”. Wide paths and green space connect the buildings and dining areas making the site accessible, welcoming and suitable for families and community groups.

With an initial licensed capacity of 1,200, the opening of Baillie Hill will create more than 100 jobs.

Heritage has played a central role in the redevelopment. The restoration of Elizabeth Baillie House has preserved original architectural features, and reclaimed jarrah has been used throughout the site.

General Manager Thomas Curtis and Food and Beverage Manager Patrick De Costa, who have overseen the operational delivery of the site, say the focus has been on creating a place that feels connected, welcoming and easy to enjoy.

โ€œEvery element at Baillie Hill has been designed to bring people together,โ€ says Curtis. โ€œEach venue has its own identity, atmosphere and point of view, but the experience across the site feels cohesive. Whether youโ€™re here for breakfast, an afternoon with the kids, or drinks with friends, it all flows naturally.โ€

Food and beverage venues include The Berwick Bar & Kitchen, Millyโ€™s Acre, Parco Pizza and Greensleeves Gelato. An impressive central kitchen with a large pizza oven services all venues.

Milly’s offers casual dining – think small plates, burgers and steak sandwiches – and will be serving breakfast on weekends. The Berwick has more of traditional pub-bistro menu featuring steak, fish and pasta. Pizzas are available in both venues.

We tried dishes from both Milly’s and The Berwick – see the menus from the preview event above for a quick idea. Full menus can be seen on the Baillie Hill website. My highlight was the clever Indian-spiced carrot scotch egg.

Bethโ€™s Bakery is expected to open in March, and the “Long Hall” function space is ideal for special and private events, Gelato is made on-site and coffee across the precinct is Loot from Community Coffee Co.

โ€œTo us, neighbourhood hospitality means accessibility,โ€ says De Costa.โ€œItโ€™s about creating spaces that people feel comfortable dropping into at any time, places that fit into
everyday routines rather than just special occasions. Quality does not have to be formal or exclusive. We focus on doing simple things well and keeping the experience genuine.โ€

Baillie Hill opens to the public at 11am on Monday, 19 January 2026.
